Step-by-Step Preparation

Step 1: Make the Pineapple Shrub

  • In a medium saucepan, bring 1¼ cups sugar and 1 cup water to a boil, stirring until the sugar dissolves (about 3 minutes).
  • Add the pineapple chunks, reduce heat, and simmer for 10 minutes.
  • Remove from heat and let the mixture sit for 30 minutes to infuse.

    • Remaining pineapple pieces
    • 5 mint sprigs
    • Lime wheels
